At Bistro One we realise that it is not just our hard work which goes into every dish that counts. It is in fact, our dedicated and passionate suppliers together with their fine produce that makes our job immeasurably easier. In these tough times we make a special effort to buy Irish and support our brilliant farmers and artisan suppliers who go the extra mile to produce such quality ingredients. Indeed we like to keep the supply chain as short as possible and we buy direct from many of our suppliers. To truly understand about the provenance of our ingredients there has to be a genuine supplier relationship that goes beyond business itself that demonstrates the passions of both supplier and craftsmen. Many of our suppliers have worked with us for many years now and we would like to introduce you to a few of the great people we’re proud to be working with and whom supply Bistro One on a daily basis with their amazing produce.

John O’Reilly Butchers
John has been supplying beef to us for over 12 years now, he exclusively dry ages our rib eye steak on the bone for a minimum of 28 days. Anyone who has not visited John’s butcher shop in Mount Merrion, should do so. And of course mention that you are a Bistro One customer!
Cavistons Seafood
Peter Caviston is a great friend of the restaurant and he supplies us with fresh fish. He is on the phone to us every morning at 7am to talk about what he has bought for us at the morning market.
Woodcock Smokery
Sally Barnes started Woodcock Smokery in Castletowsend, Co.Cork. Her methology is time honoured and traditional and her products take time to prepare and finish without making use of any colourings or artificial preservatives. All that’s added is salt, smoke, skill and lots of time.
Sheridans
Sheridans Cheesemongers are our suppliers of the best cheeses form Ireland and continental Europe. We particularly focus on Irish Cheeses on our cheese board. Durrus, Cashel Blue, Ardrahan, Coolea and Cooleny are amongst are favourites.
La Rousse Foods
La Rousse foods is our supplier of high quality dry goods….From Spanish almonds to our wholemeal flour for Bistro One’s brown bread, Marc and all his team put quality first.
Kilkenny Free Range Chicken & Goose
We got to know Mary & Tony Walsh through Garret Byrne (Campagne Restaurant Kilkenny). I’ve been to Mary’s farm myself and I can assure you that when Mary calls her chicken free range, she means it! Mary raises Hubbard chicks from day old chicks. They live in specially designed mobile sheds with access to the open pasture in the daytime.
Paul Keane
Paul Keane and his family make the wonderful Bluebell Falls Goats Cheese in County Clare. Paul only uses milk from his own heard of goats to ensure his cheese is the highest quality. He delivers his cheese direct to Bistro One every week.
Newfresh
Alan Mc Govern and his team supply us only the freshest and most seasonal produce from Ireland. He also imports direct from the best markets in France and Italy.
M&K Butchers
Michael & his team are our suppliers of O’Doherty Saddleback Black Bacon products and of Connemara Hill Lamb.
Moyallon
Jilly Doogans Moyallon was taken over by Hannon Meats in 2010 but Jilly still ensures her dry aged bacon loin and Irish Sausages are still the best around.
Ted Browne
John Browne continues the family tradition if the finest organic smoked salmon. Our delivery arrives direct every week from Dingle.
Wrights of Marino
The Wright family have been in the fish business for three generations now, they supply us with fresh fish including our Organic Clare Island Salmon.
Peter Whelan
Peter rears Free Range Tamworth Pigs on his farm outside Slane Co. Meath. Our team of chefs visited the farm in October 2010 and they were really impressed. The pigs are raised outside and housed in smaller, less commercial sheds, therefore happy pigs!
