Our aim at Bistro One is to use where possible, quality Irish ingredients, cooked in a simple manner with a European sensibility. Within that we try to source both organic and free range produce from small producers who are passionate about what they do.

In our kitchen, we work with the seasons i.e Asparagus is only available for 6/8 weeks….A shame but true. To this end we have a menu which is written daily and whilst retaining our classic dishes, is reflective of what the season has to offer.  Whether it is raspberries hand-picked down the road in Kilmacanogue or Sally Barnes award winning smoked haddock - we want you to have it.

Most importantly we source these seasonal goods not because this is the fad or fashion but because we believe that the integrity of our produce is the back bone of our offering.
